Torta de Alajú
Alajú Torte. This type of turrón gets its name from the Arabic word “al-hasu”, meaning filling. Select whole roasted almonds and exquisite Alcarria honey, cooked slowly and finally topped with toasted breadcrumbs.
This filling is formed into a torte and sandwiched between two thin wafers to give this sweet its characteristic shape. Almost forgotten in Spanish confectionery, we wanted to rescue it to be savoured by the most demanding palates.
